    When you try to make this yourself remember to use high protein flour for this. 13-14% otherwise it is gonna be a wet mess

    Tried this recipe three times, failed every time. First two times I had trouble getting the temperature to 95. Then I bought a different milk that was sure to be non-homogenized. After waiting for 14 minutes the milk never congealed with rennet. I give up.

    Maybe consider a daily speeded up video of the progress each day. Quick intro from you about what's being done and you can make a few shorts per day or every other day from them. Maybe even combine for a weekly review. You could even film the intros in 1 day
